Ideally, a well-equipped kitchen will have a variety of grinders to serve various needs: grinding small or large amounts of spices; combining dry spices with fresh herbs; obtaining fine or coarse grinds; making a dry spice blend; and making a blend that will be turned into a paste or puree. To meet all these needs, I strongly recommend that you invest in an electric spice grinder (or a coffee grinder), a mortar and pestle, a blender, and a food processor or mini chopper.
