Artichokes are edible thistles, a harsh description for one of the most delicious and intriguingly flavoured of vegetables. Only asparagus shares such a fine and complex quality, something reflected in the price of both, though artichokes are actually much easier to cultivate than asparagus.
To prepare globe artichokes, break off the stems and put the heads to soak upside down in iced salted water for 45–60 minutes. The close-packed leaves sometimes have dirt or insects between them and this is therefore a sensible preliminary.
