Writing a cookbook is never solely the achievement of one person. It involves many hands, eyes, palates, and opinions over the long haul. For their immense and unflagging efforts to make this the best book it could be, and for their unerring dexterity and good taste, I wish to thank Sherri Gardiner, Sage Stetson, and Lolita Mendoza, all former students in my professional baking classes at Los Angeles Trade Technical College.
