I hate to recycle recipes from How to Eat, but Christmas puts me into something of a quandary because it’s not about innovation but tradition, and you can’t have Christmas pudding or mince pies without brandy butter. And so evangelical have I become about the Sauternes custard and iced rum sauce, I really couldn’t bear to leave them out.
