All these ideas for ice cream use a coconut milk base to provide creaminess and almond milk to smooth out the coconut flavour. The creamiest results are achieved in an ice-cream maker, but it’s possible to make good ice cream by freezing the mixture for several hours, blitzing in a food processor, freezing for a further hour and then blitzing again just before serving.
