While we all like to think that muesli or flapjack style bars are healthy, many recipes contain large amounts of butter and sugar. Made with a mixture of wholegrains such as oats, buckwheat flakes or quinoa flakes they add fibre, help to reduce cholesterol and in the case of quinoa add protein too. The recipes in this chapter are all made with much less sugar and butter than traditional recipes, with lots of options to use dairy-free soya margarine or olive oil too. Flavour has been added with naturally sweet dried fruits, spices, orange zest and juice, and vanilla extract.
