Above: Make a chocolate cake with naturally sweet beetroot so you can cut down on the refined sugar but retain the flavour.
If you feel that you are lacking in energy and concentration this could be down to unbalanced blood sugar levels. Glucose is a sugar needed by all the cells in the body to function (especially the brain cells), and it’s important that the concentration of glucose in the blood is maintained at a constant level. When you eat a meal, particularly one that is high in carbohydrates such as pasta, bread and cakes, the level of glucose in your blood rises. Insulin is pumped into your system and as a response, glucose is stored in the cells for future use as glycogen. But the body can only store a certain amount, and if you don’t burn off excess glucose in the body it will turn to fat – which is why we need to focus on sugar rather than fat when trying to fight obesity.
