Plover and Green Plovers’ Eggs

Although the plover and green plover may be distinguished by the difference in their plumage they both have the same habits and haunts and their eggs are almost identical in appearance.
These eggs which are roughly the same size as those of a pigeon, have a light green coloured shell touched with black spots. When cooked, the white of the eggs takes on a milky tint and is not quite so firm as the whites of other eggs.
Although all the usual preparations of eggs are applicable, plovers eggs are usually served hard-boiled and cold.
