Soufflés of ham are made from a mixture using either cooked or raw ham. The mixture using raw ham is in effect a type of Mousseline forcemeat and being less fragile it has the advantage of keeping its quality for some time if prepared in advance. Thus it is more suitable for serving large numbers of people.
