There are two main types of salad—simple salads and composed or made-up salads.
Simple salads are raw green salads such as are served with a hot roast joint; composed salads are those made with several kinds of cooked vegetables which are usually served with Relevés, Entrées and cold roast dishes.
Mayonnaise salads are only a variation of the composed salads but because of the ingredients they contain they are accepted as being cold entrées.
In this book the recipes for the various kinds of Mayonnaise salads such as Mayonnaise of fish and poultry are included at the end of the sections dealing with the principal ingredient from which they are made.
