Five types of fish main course are found in the Russian cuisine: boiled fish, either whole or in large pieces; whole steamed fish; fried fillets, usually dipped first in an egg-and-flour mixture; grilled fish, usually left whole and served with a flour and sour cream sauce; and baked fish, cooked slowly in the oven and smothered in sour cream.
