The Cookie Jar Blend was born and bred to celebrate our national fixation with cookies. I’ve experimented with literally thousands of variations of cookie recipes over the years to get this blend to where you can use it to make a mountain of cookies that have a multitude of textures. To keep the chapter accessible and light, rather than daunting, I made a point to create an arsenal of recipes that show you how to make any kind of cookie perfect and bundled them into their constituent groups. The chapter begins with drop cookies, with nearly all of the recipes in that group essentially a variation on the Ultimate Chocolate Chip Cookie (because let’s face it, most drop cookies are a variation on a the same ingredients). In doing this, I will show you how to make minute adjustments to a flawless recipe so you can then take these suggestions and come up with or make adaptations of your own. The rolled-and-cut grouping of recipes is different because rolled-and-cut cookies vary more widely, so you will notice a change of pace in that batch. From there, we transition into hand-formed cookies and finish with bars. So wade right in, make a batch, and see the method to the madness.
