Even if your family and neighbors consider you the best pie baker in the country, do read the preceding chapter, Pie Crusts of All Kinds, before you make any of the fruit pie recipes in this chapter. Remember that no pie is better than its pastry. And much of the success with pie crusts depends on you—because the ingredients are really quite simple. It’s how you handle them that counts.
You will find a wide variety of pastry recipes. Some of them are new; you’ll want to give them a try. (And when you don’t have time to make pie crust, don’t forget you can buy the mix in packages or frozen rolled pastry.)
