Creamy, white blossoms on elderberry bushes start daydreams of summer pies. Elderberry is a pioneer pie that never has gone out of style. The edible blue or black berries have a tart flavor of their own, which country cooks frequently point up with a touch of vinegar or lemon juice. Some pie bakers prefer to combine elderberries with other fruits—apples, gooseberries, cherries, for instance.

Elderberries, like blueberries, freeze successfully without sweetening. During seasons when bucketfuls of berries may be picked free as all outdoors, some cooks put packages of eiderberries in their freezers for around-the-year pie baking. They use the frozen berries like fresh ones.
