Fresh dates are widely available today. Women who are expert pie bakers make excellent use of them. They keep the fruit in their freezers for around-the-year use. The dates you use should be soft if pies are to be at their best. If the fruit has become dry or hard, steam it for a few minutes. The moisture has a marvelous softening effect.
