Cooks in Pennsylvania Dutch communities turn out excellent pies that have a close kinship to cakes. Lemon Cake-Pie is one tasty example. Flaky pastry holds the cheerful yellow filling with a lovely, rich red-orange top, the color that develops in browning. Most acceptable dessert for a rather heavy meal. Truly delicate and delicious.
