No farm woman needs to be reminded how attractive puffs of whipped cream are on pies. But you may have forgotten how your grandmother swirled it on pies and garnished it with homemade jellies or strawberry and other fruit preserves. We borrowed a trick from her for our Snow Cream Pie—try it, just in case you’ve forgotten how pretty and tasty berry preserves are on pie. And we’ve used jellies, melted, for glazing some of our best 1-crust fruit and berry pies and tarts.

Sweeten whipped cream slightly for topping pies. Add 2 to 4 tblsp. sifted confectioners sugar to 1 c. heavy cream in deep bowl. Chill, then whip until stiff. Makes about 2 cups.
