You don’t have to visit Canada or our own adjacent north country to enjoy tourtière, the famous holiday pork pie. We have two recipes, both from New England farm kitchens.

The true tourtière always contains ground lean pork and mashed potatoes in a delicately spiced filling, but there are many variations. We give you the traditional type, which originated in the Province of Quebec. Usually, the cooks there like to double the amount of spices, using ¼ tsp. cloves and ½ tsp. cinnamon in a 9" pie. While French-speaking people call it tourtière, you’ll find it’s a real treat in our language as Quebec Pork Pie.
