Farm mothers say that one of the most successful ways of persuading men and children to like vegetables, other than their ever favorite potatoes, is to serve them in pies. Anything held in tender, flaky, golden pastry, or topped by it, has a head start on getting a welcome at farm tables. Once the vegetable is approved in a pie, it also will fare better in other dishes. So pies, country cooks find, are useful in winning friends for garden vegetables.
