Preparing the Jars for Bottling

There are two types, one fastening with a screw band, and the other with a clip. In some cases the seal itself is made by a separate rubber ring, and these frequently need replacing. Rings which have lost their elasticity have perished. The latest type of jar has a lacquered metal disk to which a rubber ring is attached. This is very easy to use and a great time saver.
Rubber rings, tops and screw bands should be scalded, and jars rinsed out with boiling water, just before use. Do not prepare your equipment too soon, or it may become contaminated again before it is used. Discard any jars or glass tops with chipped rims, and any metal covers which are bent or have been stained by fruit acids. Do not wipe the insides of the jars dry.
