If you use water in your ferments, as in brine fermentation, there are some rules to follow. Firstly, it cannot contain chlorine as this will affect the ferment in a negative way. This means that if you use normal tap or faucet water you need to filter it or boil it before use. Another way, although time-consuming, to get the chlorine out is to leave it to evaporate naturally for 24 hours. Most water filters, including jug filters, will filter out chlorine. If you have your own water well it will probably not be chlorinated and the water can be used without boiling or filtering. Bought still spring water or mineral water can also be used.
