The making of a great soup, or even just a good one, is an art. Sometimes even trained professionals are unable to conjure up a preparation worthy of praise. Most do not control their creative urges and end up overcomplicating the ingredients list to no end. They recklessly pile on unnecessary garnishes, turning the soup into a shadow of what it once was. Others simply don’t give a damn about soup at all!
The quality of a soup speaks directly to the talents of its maker and most certainly sets the tone for the dishes to follow. If you start a meal with a mucked-up soup, it’s only going downhill from there.
