I hope you’ll find plenty of recipes in this book, with suitable flexibility that works for you as well as your family and friends’ requirements. This time round trying out these recipes was slightly different as I was writing this book during lockdown due to the COVID pandemic. It was a challenge I embraced so rather than sharing my bakes in person, I found myself posting goodies to family members I couldn’t see and leaving parcels on my neighbours' doorsteps. This turned out to be a great way of cooking for people with varying dietary requirements that I may not have connected with if it hadn’t been for the unusual situation we found ourselves living in. They were extremely grateful and gave me some fantastic feedback that I worked into the recipes.
