For gluten-free baking, there are some fantastic gluten-free flour blends available to buy that can commonly be used as a direct swap when a recipe calls for plain or self-raising flour. I have suggested using it as a flexible option in many recipes in this book. However, you’ll see that I like to use other alternatives as well.
