Virtually all of the small equipment items used for general food-service preparation and turn-out are also used for garde manger. However, some specialty tools are specific to garde manger work. Some of these tools were adopted from baking and pastry, while others were designed specifically with garde manger in mind.
In this section, tools for general garde manger work are illustrated and identified. Tools and equipment used in garde manger subspecialties such as charcuterie, cheese making, and advanced décor work are presented in the appropriate chapters.
