Once salad greens are cleaned and dried, they should be used as quickly as possible. However, fresh, properly washed and dried sturdy greens will last several days in the refrigerator. If refrigerated for more than 24 hours, check for moisture. If still a little wet, rewrap in dry linen. Once the greens are nicely dry, transfer them to perforated plastic bags; they can usually be refrigerated in these bags for a few days longer.
