Wholesale produce received directly from a purveyor arrives packed in the proper containers for storage and should be kept in those containers until you are ready to fabricate it. The temperature at which produce should be stored varies according to type. Most vegetables and many fruits keep well when refrigerated at about 38°F (3°C). However, with fruits (and some of those vegetables that are botanically fruits), you must take ripening into consideration.
