One way to classify complex salads is by basic presentation style: mixed presentation or arranged presentation.
  1. Mixed presentation. In this style, all of the ingredients are mixed together with the dressing and mounded on a plate or platter. A salad made in this manner is called a complex salad in mixed presentation. Sometimes this type of salad is placed on a lettuce liner leaf or on a bed of torn or cut leafy greens. Additional garnish elements may be arranged on top.
  2. Arranged presentation. In this style, each of the various elements is dressed or seasoned separately and then all are assembled together on the plate in an attractive, artful composition. This is called a complex salad in arranged presentation. The five styles of arranged presentation are covered later in this chapter.
