A seafood cocktail consists of chilled seafood tossed or topped with a sauce and typically served in a cocktail glass on a bed of shredded lettuce with a lemon wedge. Shrimp cocktail is the best-known type of seafood cocktail. However, seafood cocktails may be made with crabmeat, lobster meat, crayfish tails, raw oysters, or a mixture of chilled seafood. In some operations, seafood cocktails are served in a shrimp cocktail chiller, which is a stainless-steel or glass presentation vessel. The bottom cup of the chiller holds crushed ice, and the top cup holds the seafood and sauce. Sometimes shrimp are hung from the rim, and only the cocktail sauce is placed in the top cup.
