A mousse is a food assembled from precooked ingredients and that receives no further cooking after it is assembled. In addition, a mousse receives a lot of handling and has a lot of surface area exposed to contamination. Many mousses have a highly perishable protein food as their main ingredient, and all contain protein in the form of cream and, sometimes, raw egg whites.
