Oysters, once plentiful, have dramatically declined due to overfishing and pollution. Today, they are expensive and considered a luxury. Oysters are bivalves with hard, rough shells of varying shape. The shells have a definitive top and bottom. The bottom shell is more cup-like, while the top shell is flatter. The flesh is very delicate and, when the oysters are fresh, contains a high percentage of fluid. The liquid surrounding the oyster is called oyster liquor (even though it does not contain alcohol). Oyster liquor is flavorful and should be reserved and used for soups and sauces.
