Unopened containers of fresh caviar may be stored at 28°–32°F (–2°–0° C) for two to three weeks without loss of quality. Keep the containers in the refrigerator in a bed of crushed ice in a drainer box. The containers should be turned over at one- or two-day intervals to keep all the berries in contact with the caviar oil.
Cover the surface of an open caviar container with plastic film and keep the container tightly closed. Avoid cross-contamination by using a fresh disposable plastic spoon each time you remove some caviar from the container. An open container of fresh caviar should be used within three days.
