Soups made from ground or chopped raw vegetables have a rustic, almost salad-like texture. Most of the vegetable mixture is puréed in a blender or food processor, and then additional vegetables that have been chopped or fabricated into small dice are added. Often, these soups are enhanced with a flavorful oil for seasoning, enrichment, and a glossy appearance. Some textured raw vegetable soups are enriched with sour cream, crème fraîche, or yogurt.
