It is important to match the style of a cold soup with the style of the rest of the menu. Many cold soups have a casual feeling and are appropriate as a starter before grilled meats, salad entrées, and other simple summer foods. Others, such as jellied consommés and cream-enriched purées, are elegant and technically complex, and may be served as the first course of a formal meal.
