The filling is the heart of the sandwich and is considered its main ingredient. In fact, the portion size of a particular sandwich is expressed as the weight of its filling. For example, a “4-oz (120-g) turkey sandwich” actually weighs much more if placed on a scale. In this case, the additional weight of the bread, spread, and internal garnishes is understood.

A sandwich filling may consist of a single ingredient or a combination of ingredients. Most sandwich fillings are animal protein foods such as meats, poultry, seafood items, cheeses, and eggs. However, sandwiches that conform to vegan dietary guidelines are becoming more popular.
