A pressed sandwich is a simple sandwich that is griddle-baked between the hot plates of a countertop appliance called a sandwich press or panini grill or, in Spanish, a plancha.

The plates of a sandwich press have several functions. As the hot plates contact the top and bottom bread slices, they toast the bread by direct heat. The heat of the plates is transmitted into the interior of the sandwich and melts the filling ingredients, which almost always include cheese. Finally, the pressure exerted by the plates compresses the sandwich and makes it compact and neat to eat.
