A fermented dairy product is a food or beverage that begins as fresh milk or cream but is changed in several ways by the action of a beneficial bacterial culture. Fermentation is the process by which a bacterial culture creates changes in a food or beverage. Most fermented dairy products are made in commercial dairies, but they may also be prepared in-house by the garde manger department.
