Plate painting can be described as the art of using sauces to create images on a plate. One way to think about plate painting is that the plate is the canvas and the sauces are the paint.

Cold sauces and a variety of fluid condiments are used to embellish garde manger plate presentations. Coulis and purées, mayonnaise sauces, glazes, essences, and flavored oils are among the many preparations that can be used. Specialized equipment is needed: squeeze bottles, droppers, piping cones, and pastry bags and tips.
