From the classic cuisine period well into the twentieth century, huge ice blocks were used to keep dining rooms and banquet halls cool during hot weather. Garde manger chefs used this ice as a means of expressing their creativity, turning necessity into art. Today, many feel no important buffet is complete without an ice sculpture as its focal point.
