Professional Garde Manger is the much-anticipated new addition to Wayne Gisslen’s Professional series. Co-authors Lou Sackett and Jaclyn Pestka are pleased and honored to have worked with Wayne in creating this book.

Lou Sackett is a culinary educator and food writer whose career includes more than fifteen years teaching culinary arts at secondary and post secondary levels, as well as owning and operating a nationally acclaimed restaurant. Among her contributions to this book are salads and vegetable preparations, hors d’oeuvres, and aspic and chaud-froid work. Her experience in preparing and selecting fine cheeses is showcased in this book’s dairy chapter. Lou is the team’s primary writer and food stylist.
