You are expected to have previously mastered a wide variety of culinary fundamentals prior to your garde manger course. You have most likely already taken courses in basic knife skills, cooking techniques, and sanitation, and even perhaps baking fundamentals.
Garde manger success depends on a sound foundation of culinary knowledge and food preparation skills, and each of its many different subspecialties has different technical requirements. For this reason, a list of prerequisites is presented at the beginning of each chapter. As much as possible, this book is organized so new information builds on previously learned information. Thus, a chapter prerequisite may refer you back to a previous chapter. However, in a few cases you will be referred to a later chapter for special techniques.
