Many recipes in this book include variations. Recipe variations are guidelines for modifying the existing recipe to make another dish that is similar to, yet different from, the original. Most variations are ingredient-driven, replacing one set of ingredients with another. Some change the seasonality of the dish by replacing ingredients available in one season with those of another.
