Paul Bocuse comes from a long line of restaurateurs. The family has lived for two centuries or more only a few kilometres from the centre of Lyon and the Bocuse menu reflects the tradition of Lyonnais cooking. The countryside round Lyon is some of the most abundant in Europe and the great markets of Lyon are the best in the world.

The Bocuse menu cover shows the restaurant from the neatly kept courtyard. Save for the name emblazoned in huge letters along the roof, it is an unassuming building, dedicated to comfort and good food rather than grandeur.
