This Mediterranean or European sea bass is most commonly sold by its Italian name, branzino (Dicentrarchus labrax). A round, nonoily, warm-to-temperate-water fish, it’s found predominantly in the North Atlantic and Mediterranean Sea. Similar in size and taste to American stripers, it is in fact a different species than the popular recreational fish striped American sea bass (Morone saxatilis), found in the eastern United States.

Though they exist in the wild, most branzino found in the market is farm-raised. Commercial farming is well established around the Mediterranean but there are concerns about environmental impacts in such a relatively small body of water. Demand is increasing in the United States and most branzino farming here is done in indoor recirculating systems. Seafood Watch lists fish raised in indoor recirculating aquaculture systems (RAS) as “Good” or “Best Choices.” To make sure that any branzino is sustainably sourced just ask your fishmonger!
