- Live crustaceans like lobster and crab should still be moving.
- Mollusks like mussels, clams, and oysters should have closed shells. Since they are “gappers” in the wild, their shells will sometimes be slightly open. If you give them a pinch and they don’t close, discard them.
- Be careful not to seal live shellfish like mussels, oysters, and clams in a plastic bag. They need to breathe.
- Cooked shellfish looks moist and not dried out.
