Live crustaceans like lobster and crab should still be moving.
Mollusks like mussels, clams, and oysters should have closed shells. Since they are “gappers” in the wild, their shells will sometimes be slightly open. If you give them a pinch and they don’t close, discard them.
Be careful not to seal live shellfish like mussels, oysters, and clams in a plastic bag. They need to breathe.
Cooked shellfish looks moist and not dried out.
