The vent positions for grilling are usually halfway open on the upper vent and three fingers wide on the bottom vent. It’s best to actively regulate temperature during grilling when you notice it’s going up. When the grill is in use for a long time, the temperature will increase because the dome is continuously open. In that case, restrict the airflow by further closing both vents.
We like to grill in a temperature range between 395 and 450°F (200 and 230°C) on the dome thermometer, but the dome temperature is not the only factor when grilling. To determine the correct grid temperature, we still use our hands the old-fashioned way. Hold your hand about 8 inches (20 cm) above the grid. If your hand hurts within 3 seconds, your kamado is ready to use (in that particular spot).
