Grilling is actually a perfect manifestation of the Italian approach to cooking. Italian cooking is all about bringing out the flavor of the ingredients, and grilling accomplishes that perfectly. Sometimes Italians simply season vegetables or meat with salt and pepper before grilling, then drizzle with some olive oil afterwards. Meats sometimes are marinated before grilling, and seafood may be coated with a seasoned breading. Rarely are heavy sauces added to grilled food. If there is a sauce, it is usually olive oil mixed with fresh herbs.
