All of these recipes call for a 4-quart (3.8 L) pot. I use a stainless steel one with a nice big handle.
Always have a potholder or oven mitt at the ready! That handle gets hot and you’re gonna wanna grab it to keep everything stable while you stir away. This seems obvious, but 30 years into cooking and I’m still always carelessly grabbing things. Don’t be me!
My preferred tool for stirring is a slanted wooden spatula. It’s plenty sturdy and can reach into the corners of the pan in case anything delicious is hidden there.
