This book grew out of a series of articles, originally called ‘The Month in the Kitchen’, which I wrote in an attempt to discover when and why fresh foods were at their best – by which I mean most delicious.
Many people would argue that such a seasonal approach to food has become outdated. Developments in the retail scene have had an extraordinary effect on food shopping over the last couple of decades: half the market is now controlled by the five biggest supermarket chains, whose massive buying power has altered patterns of British production and food imports out of all recognition. Their professed aim is to offer ever wider choice and better quality.
