When the fish is held up, it should be firm – not sagging or drooping. The fish flesh should spring back when you touch it. It should have no dimples or bruises. It should smell of sea – and this also applies to fresh-farmed fish.
Tell the fishmonger how you intend preparing the fish you buy. My preparation choices, after using it raw, would be to gently grill it over fruit wood, or pan fried, steamed, fried in batter or baked in the oven.
